Steaks are cut 1 ¼ inch thick, Roasts average 3 lbs, and Premium Ground Beef is also dry aged.

Every Cowshare order also includes 2 lbs all-beef hot dogs and Holiday Summer Sausage made from our Organic beef from our Ranch!

All Cattle are raised on Certified Organic Pastures and are grass finished.

Final Weight(s) and piece counts will vary-Prices are approximate- final cost will depend on final weights. All sizes are available for Pickup or Delivery.

Half Cow

180 Pounds | $1,750

This order is one-half (1/2) of a Cow. It weighs around 180 pounds, and the cuts come from all sub-primals (both front and back halves). The Purchaser may choose to receive this order in multiple pick-ups, 1/8th at a time, but has to make all pickups (or deliveries) in 3 months.

You will receive the following:

  • Filet Mignon / Tenderloin: 3 pounds (6 tenderloins)
  • Rib Eye and/or New York Steaks: 8-10 pounds (8 to 12 steaks)
  • Porterhouse and/ or T-bone Steaks: 8-10 pounds (6 to 8 steaks)
  • Sirloin Steaks: 8-16 pounds (average 1 pound each)
  • Short Ribs and/or Osso Bucco: 8-16 pounds
  • Roasts (Brisket, Rump Roast, London Broil, Chuck Roast, Cross-Rib Roast, Shoulder Roast, Tri Tip): 16-24 pounds (average 3 pounds each)
  • Steaks (Chuck Petite Tender, Eye of Round, Flank Steak, Flat Iron, Hanger Steak, Skirt Steak, Cross-Rib Steak, London Broil Steak): 20-40 pounds (weights vary)
  • Ground Beef / Hamburger Patties / Stew Meat: 90-100 pounds (Note: Ground Beef is the most common, but you may also get the other cuts) (1- and 2-pound packages)
  • Soup Bones (Marrow, Knuckle and Neck): 10-12 pounds (15+ packages)

Quarter Cow
